Fresh tofu

The new Berkeley Farmers' Market* has a vendor selling fresh tofu. When you can get it the day it's made, it's best eaten raw, with just a drizzle of soy sauce. And perhaps some scallions & sesame oil. Yum.

* The new Thursday market is from 3-7pm, at the corner of Shattuck & Rose in North Berkeley. All year round, rain or shine.

(Have I mentioned lately how much I love it here?)

How is fresh tofu different from the regular old stuff?

It's sort of like freshly-baked bread. It's just better the day it's made. And when it's *just* made & still warm...it's heavenly. No need for condiments, just eat it. It's almost sweet.

In the old market I shopped at in Korea, a vendor cranked it out fresh all day. It was cut into steaming blocks right there, and I often couldn't resist eating half of it on my way home.
